Traditionally, antioxidants serving the food industry have included synthetic options such as Butylated hydroxyanisole (BHA), Butylated hydroxytoluene (BHT), or Tertiary-Butylhydroquinone (TBHQ). As consumers begin to read and better understand ingredient labels, food products lacking synthetic ingredients are desired. With this change in consumer preference, an increase for consumer-friendly solutions to replace traditionally used synthetic antioxidants is needed.

Fresh, raw, pork sausage products are very prone to oxidation under refrigeration temperatures. However, consumers are demanding that traditionally used synthetic antioxidants be removed from these products and replaced with nature-derived alternatives. The purpose of this study was to show the efficacy of FORTIUM MTD10, a tocopherol based, plant-derived antioxidant, in extending the shelf-life of fresh, pork sausage.
