ZyloZyme® AA is a high-performance, non-GMO alpha-amylase designed to enhance liquefaction in ethanol production. Derived from Bacillus subtilis, it reduces mash viscosity and maximizes starch-to-sugar conversion, even at low dosages. ZyloZyme AA delivers reliable enzyme activity at elevated temperatures, helping processors achieve consistent ethanol yields with greater efficiency.
ZyloZyme AA functions by hydrolyzing internal alpha-1,4-glycosidic bonds in starch, breaking it down into smaller dextrins and sugars. This enzymatic activity rapidly reduces mash viscosity and facilitates conversion of starch into fermentable sugars, boosting dextrose equivalents and ethanol yield. The enzyme’s thermostability allows it to remain active throughout high-temperature liquefaction, ensuring process efficiency and consistency.
ZyloZyme AA is intended for use during the liquefaction stage of ethanol manufacturing. The product is effective across a range of processing parameters and performs optimally in high-temperature environments up to 203°F (95°C).
