Keeper® and Keeper® Professional for Seafood Processing

In the production of seafood products, the safety and shelf-life of these products are important concerns. Microbiological contaminants affecting the safety of seafood products are Campylobacter, E. coli O157:H7, Listeria, Salmonella, and others. Kemin Bio Solutions offers Keeper® and Keeper® Professional products for seafood. Keeper products are antimicrobial agents used to eliminate pathogens, extend shelf life, and improve the quality of seafood products.     

Keeper Products

Keeper and Keeper Professional are antimicrobial products for seafood processing. Keeper products are acidified sodium chlorite that generate chlorine dioxide once activated with any food grade Generally Recognized as Safe (GRAS) acid to acidify sodium chlorite. 

  • Keeper - contains 3.35% sodium chlorite
  • Keeper Professional - contains 8.35% sodium chlorite

Description

Keeper products for seafood is effective against Campylobacter, E. coli O157:H7, Listeria, Salmonella, and many other pathogens of concern (Figure 1). Keeper Products for seafood have shown to be more effective than other common antimicrobial agents including quaternary ammonia, iodophors, peracetic acid, and sodium hypochlorite (chlorine) (Figure 2).

Services 

Activation of Keeper Products for seafood can be applied manually or is offered with a variety of user-friendly, cost-effective application systems that are safe and eliminate the need for manual mixing. Test kits are also available to conveniently monitor concentrations of Keeper products in process water for seafood.
