Keeper and Keeper Professional are antimicrobial products for red meat processing. Keeper products are acidified sodium chlorite that generate chlorine dioxide once activated with any food grade Generally Recognized as Safe (GRAS) acid to acidify sodium chlorite.

Keeper products for red meat are effective against Campylobacter, E. coli, Listeria, Salmonella, and other pathogens of concern (Figure 1). Keeper products for red meat have shown to be more effective than other common antimicrobial agents including quaternary ammonia, iodophors, peracetic acid, and sodium hypochlorite (chlorine) (Figure 2).
